Breakfast of Champions

wow, that sounds grand. Breakfast of Champions… hmm, well saying yummy didn’t seem to work well. lol.

It did vanish quickly though. We debated doing it again. So it must have been somewhat ok.



It really was simple, we fried some bacon, oh add a tiny bit of water to the pan, it spreads the smoky taste through the bacon, and helps it brown better. No, don’t drain it off, it will boil away, not much water, just a bit.

Toasted some french bread, one slice was covered with Monterrey Jack cheese and went into the oven to broil until the cheese bubbled. 

On the other slice we coated it with a light layer of tomato paste, very thin. then added some of this


eeeeps not much, its hot. Then we sprinkled a bit of oregano on it.

covered it with bacon and the top cheesy slice. The sauce has a nice smokey taste. (thanks Chelle 🙂 )

  2. Ohh …okay …so as Jen is implying, I am not a quite the bacon fan that she is lol. But that DOES sound yummy….but …would I be able to substitute a cap of portebello mushroom?

    God that bacon-cheesy-hot sauce concoction sounds drooly good though.
