mmmm easy Spaghetti

Tis closing in on the end of the season for our cottage weekends. (insert very sad face here)

So we don’t bring as much food up to the cottage, instead plan on using what is there so we don’t have as much to bring home when we close.

We keep jars of spaghetti sauce there along with pasta. For those times that we have drop ins and what ever meal we had planned would not feed them. Yes I know the jars of sauce are sort of plain… and I heard you gasp.  

but wait… I have more. lol. 

We used one of those jars this past weekend. Knowing we were going to use it.. I had a bag of additions. 


So I brought up some Italian sausage, We cooked those for a bit, not long, then chopped them into smaller pieces and into that  sauce from that jar that was simmering on the stove at a very low heat.

Now a somewhat secret ingredient. Something you probably have and toss out.

Those rinds from Parmesan cheese. 2008_11_10-CheeseRind… don’t toss them out anymore, put them in a bag and keep them in the freezer. 

I added a part of one to the sauce, They are so yummy in soups too. 

Garlic, you have to have garlic…  chopped-garlic-tzatziki

onion.. chopped small  1-chop-onions

basil and parsley, lots.  

spinach… fresh, handfuls. 

red wine… perhaps a cup 

oregano, we have gobs of it growing in the garden, I added quite a bit.

Pepper, grind some up.

A splash of Worcestershire sauce. 

Stir the sauce a lot so the cheese can melt more and spread its great flavour throughout. 

Add the basil and garlic later, they do not do well if you cook them too long, the basil loses its flavour and the garlic becomes bitter. Perhaps when you think there is 10 minutes or less cooking time left. 

Spinach, toss in when the cooking is finished, stir it about, the hot sauce will cook it in  a blink. Serve it over your pasta, any kind. mmmmmmmmm.

oh, drink the rest of the wine now too. 😉
